Chickpea and Grape Tomato Salad


1 can chickpeas

15.5. oz drained and rinsed

1 pint grape tomatoes halved

1 cup mini fresh mozzarella balls halved

1/3 cup minced red onions

1/3 cup chopped fresh basil leaves

1 tbsp olive oil

1 tbsp balsamic vinegar

1 tbsp freshly squeezed lemon juice

1/2 tsp salt

1/4 tsp ground pepper


Place the ingredients in a large bowl in order and mix well. Serve immediately or it can stand for one hour at room temperature. Tomatoes lose flavour when refrigerated so add them at the last minute if you are preparing in advance.
