Apple Salad

Fast and delicious, this is one of our favourite go-to lunch salads. I usually prep all of the ingredients ahead of time so I just have to assemble before eating.

  • 1/8 cup chopped red onion
  • 1⁄4 cup stalk celery chopped
  • 1/8 tsp. of fresh or dried ginger
  • 1 tsp extra virgin olive oil
  • 1⁄2 c. chopped red apple
  • 1 tbsp fresh lemon juice.
  • Protein: 1 cup cooked chicken, 3 Tbsp of Hemp Hearts or 3 Tbsp Chia Seed


Add protein, onion, celery and apple to a mixing bowl. Drizzle with olive oil, and add lemon juice. Salt and pepper to taste. Mix together and serve on a plate. Enjoy.
