Thai Pumpkin Soup, (Source Whole30)

- 1 onion diced
- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 tbsp ginger minced
- 2 tbsp tomato paste
- 1 398ml can pure pumpkin (NOT pumpkin pie filling)
- 1 398 ml can coconut milk
- 4 cups vegetable stock
- 1 tsp green thai curry paste or 1 ½ tsp chopped green chilies
- Salt and pepper to taste
Saute onion in olive oil until soft in a large pot. Add all other ingredients, combine and simmer. Optional – use an immersion blender to smooth. Top with a variety of toppings included roasted pumpkin seeds, chopped walnuts, or fresh cilantro.
