Quinoa - (pronounced keen-wah, kee-noh-uh) is a protein-packed grain high in fibre that's extremely versatile. It has a rich, nutty flavour, is easy to prepare (just like rice on the stove), and is gluten-free.
If your house is anything like ours, mornings are crazy busy - even in the summer! Having healthy pre-cooked food in the fridge can be a time saver, especially when it comes to breakfast. In this recipe below, we turn left-over quinoa into a super healthy, protein packed breakfast bowl.
1/2 cup quinoa (cooked from the night before, stored in fridge)
1/2 banana - chopped
1 cup blueberries (today I used frozen)
1 tsp hemp hearts (you use diced almonds or any other nut)
drizzle of honey
Place quinoa in bowl. Top with bananas and blueberries. Sprinkle with hemp hearts. Drizzle with honey. Enjoy:)
